SCIENTISTS in New Zealand have discovered some cows have the natural genetic ability to produce milk with unique characteristics, such as being skimmed or high fat. This has led to plans for breeding commercial herds delivering tailor-made milk for manufacturers such as confectionary producers, removing the need for initial processing. The researchers, from the dairy firm Fonterra, even plan to breed cows to produce unsaturated fats in milk.
