They include the treatment of must and fermenting wine with charcoal, employing L-ascorbic acid, adding dimethyldicarbonate (DMDC) and using yeast mannoproteins. Ministers have also told Slovene and Slovak wine producers to discard by-products from over-pressing of grapes or wine lees, rather than distilling them.
