THE MEAT hygiene committee of the world food standards body Codex Alimentarius has approved the integration of rules for "processed meat" and "meat preparations" into its draft code of hygienic practice for meat, which has previously focused on fresh meat. The rules advise meat industries on assessing risks posed by disease to their businesses.
