Long before standards and guidelines on food and drink make their way into the codified statutes of national laws, many have often already gone through a rigorous, scientifically based process of scrutiny by an intergovernmental body whose membership comprises 99% of the world’s population. Known as the Codex Alimentarius Commission (CAC), this organisation is an influential - yet often misunderstood - cooperative project of the World Health Organisation (WHO) and the United Nations Food and Agriculture Organisation (FAO).
